Performance is a craps shoot. It could be anything from stock to fully built. For the price, I wouldn't expect a high-performance build. I suggest you also find out how many miles the car actually has on the body and any drivetrain and suspensions components that have not been rebuilt or replaced.
A bone stock 350 is probably going to be far cry from expectations of a serious sports car, especially depending upon whatever generation 350 is being used - some turned rather abysmal horsepower for several years. If that was the case, you could end up with plenty of bark, but very little bite.
For comparison against an aftermarket third-generation GM f-body build in my market: http://www.autotrader.com/fyc/vdp.jsp?car_id=227201096
