A warrior becuase the learning curve is much less plus their advanced job options are wicked and they are always in demand because of their ability to absorb damage.
Monks are great early on but suck in upper levels. You will stand around for hours looking for groups.
White Mages are always in high demand but if you like to fight then this isnt you.
Black Mages are one of the highest damage dealers in the game and are wanted by many parties. However they cant take any damage so they depend on Tanks (ie warriors and monks) to be present.
Red Mages allows for melee and Magic but they arent great at either. At higher levels they have some great skills (ie mana regen) that makes them sought after.
Thiefs suck bad until about level 30 then they blossom quickly. They are hard to level early on because no one wants them in their party. They are great money makes starting at about level 15.
I played a Black Mage with White Mage sub to level cap and had much success. Black Mages are hard to level in the early soloing stages and they dont (or didnt) really have an advanced job option. There was talk of a Blue Mage being introduced as an advanced job but not sure anymore since I quit playing a few months ago.
Honestly the best character to play is the one that interests you the most. I am a fan of mages and dont like playing melee characters so for me the best class is Black Mages. You need to research each character and decide for yourself.

once you get to around lvl 20 (with whatever job you do) get your subjob and work on something that will take you to lvl 30+ once you get there, get an advanced job (paladin, dark knight, etc) and make that your main job
It is always a good idea to have more than 1 job level on one character (i.e. lvl 27 war, 19 mnk, 15 thf, etc) so you can play at all lvl ranges, because if your linkshell wants to EXP, you got somethin to work on
AS FOR DAMAGE, blm by far deals more damage than anything, but any job can deal significant damage when they want. Once THF gets to lvl 15, sneak attack will be your best friend!
war doesn't necissarily deal damage well, but they are good tanks (paladins are better)
monk is good depending on your subjob: if you sub thf (lvl 30 mnk/thf) you get sneak + combo, eat some food and you are a fighting machine
