I like:
Miscellaneous > Auto Copy 0.3 (copy just by selecting the text)
Navigation > Mouse Gestures 1.0 (navigate with right-mouse button)
Navigation > Disable Targets For Downloads 0.8
Navigation > StumbleUpon 1.999 (let's you 'stumble upon' cool websites)
Search Tools > Google Pagerank Status 0.9.3 (like Google for IE's page rank)
Search Tools > Googlebar 0.9.0.30 (Google for Firefox)
Search Tools > GooglePreview 0.8 (thumbnails of websites when you're doing a search)
Tabbed Browsing > Tabbrowser Preferences 1.1.1

Some great Firefox plugins: IE View, Bug-Me-Not, spell check, dictionary look-up, and FireSomething (pretty funny).

All I have is Mouse Gestures 1.0. I can't live without mouse gestures anymore.
You know that you can do a dict look up by typing "dict <word>" in the address bar, LeftCoast? You don't need a plugin for it.

Is there a list of what each extension does? If so where can I find it?

The Mozilla site covers most of them. You'll have to do some browsing to figure out what anything does though. As far as I know, there isn't any actual list of everything but then again I never really looked for one.

What does I must not fear do?
You can use Google for definitions also, just click in the google field and type "define: *word*".
Google rawks :P
I'm still happy with opera, but you people are making we want to install firefox and try those extensions
Are there any that let you 'Paste and Go' by pressing Ctrl-D instead of V (or is that built in to the new version)?
Any that let you reload a page every x seconds?
Copy to note?
