IDK where you read, but you don't have to configure SLI profiles for games. I never have, and I've had my SLI rig for a year +.
And the x2 cards are nice. I'm currently rocking a 9800gx2, and I personally love it. SLI on a stick, plus I have a 8800gt in there to handle physics, there's not a game I can't max with decent framerates in 1680x1050 res. 
Anywho, I still think you'll have a decent gaming rig, so no worries.
