We used hickory for the smoke wood...
Kept the smoke constant for about 5.5 hrs... maybe a tad bit more.
smoke soaked thru... right to the bone, just as it should.

Your missing out.
It's better than roasted /broasted or fried/injected ... by a LONG shot.
You just have to keep the ash low, and fresh wood for smoke, and plenty of water.
Let the bird reach 160degrees F... and youre good to go. |
