depends, i3 & i5 are available in Dual Cores, and i5 & i7 are also available in Quad cores.
Quick look at newegg, basing on the GPU's they have in them...
Newegg.com - HP ENVY 17-2280NR Notebook Intel Core i7 2670QM(2.20GHz) 17.3" 6GB Memory DDR3 1333 1TB HDD 7200rpm BD Combo AMD Radeon HD 6850M
Newegg.com - DELL Alienware M17x R3 (AM17XR3-5001STB) Notebook Intel Core i7 2630QM(2.00GHz) 17.3" 8GB Memory DDR3 1333 750GB HDD 7200rpm DVD±R/RW AMD Radeon HD 6870M
Newegg.com - HP dv6-6180us Notebook Intel Core i7 2670QM(2.20GHz) 15.6" 6GB Memory DDR3 750GB HDD 5400rpm DVD Super Multi AMD Radeon HD 6770M
Newegg.com - ASUS G Series G53SW-A1 Notebook Intel Core i7 2630QM(2.00GHz) 15.6" 8GB Memory DDR3 1333 750GB HDD 7200rpm DVD Super Multi NVIDIA GeForce GTX 460M

Newegg.com - DELL Alienware M18x (AM18X-6731BAA) Notebook Intel Core i7 2630QM(2.00GHz) 18.4" 8GB Memory DDR3 1333 1TB HDD DVD±R/RW NVIDIA GeForce GTX 460M SLI
Newegg.com - Recertified: TOSHIBA Qosmio X500-Q930XB Refurbished Notebook Intel Core i7 2630QM(2.00GHz) 18.4" 8GB Memory DDR3 1333 1TB HDD 7200rpm Dual layer DVD Burner NVIDIA GeForce GTX 460M
Newegg.com - TOSHIBA Qosmio X775-Q7270 Notebook Intel Core i5 2410M(2.30GHz) 17.3" 6GB Memory DDR3 1333 640GB HDD 7200rpm DVD Super Multi NVIDIA GeForce GTX 560M
just some of the models available.
Basically i5 or i7, as fast a clock speed as you can get (most i7's will be around 2GHz max, some may be a bit faster, most i5's will be around same speeds, some might be closer to 2.3GHz or so, keep in mind that some of the i5's are Dual or Quad cores)
Geforce GTX 460M, 560M, 570M, or Radeon 6770M, 6850M, 6870M, or 5850M, 5870M, are the higher end Graphics chips to look at.
6GB or 8GB is MORE than enough RAM.
Make sure the Screen Resolution is at least 1366x768 or 1280x720, or greater.
15" displays are nice for portability, but 17 & 18" are best for gaming, but these are a beast to lug around.
If possible get an LED Back lit LCD display model.
another plus is a Bluray Drive in the laptop.
USB 3.0 if possible.i7 940//Corsair H60//EVGA X58 SLI LE//6GB Corsair Vengeance 1600MHz//2x EVGA GTX 560 Ti FPB SLI//NZXT Hale82 850W//CM 690 II Advanced//Win7 64//WD 74GB V-raptor, 750GB Black, 1.5TB Green
