if no overclocking you can ditch that RAM and get slower, if not cheaper stuff.
the RAM you picked out is Overclocking memory, designed for that from the get go.
DDR3 1066 or 1333MHz stuff is plenty for a stock, non overclocking system, anything higher than that is and will probably require overclocking and setting advertised Memory speeds in the motherboards Bios.
This stuff is plenty fine for your prospective build, even before the Mail in Rebate, its the cheapest there @ 1333Mhz speed.

Power supply, you could probably run all of that on a 350-400W quality unit, but 500W is plenty OK too, leaves some room for a better Video card or more components down the road.
5670 is a good card to start with, I'm not familiar on the new WoW Expansion, but StarCraft 2, I did follow for a while, but since it seems to keep getting delayed, and Diablo 3 is taking a back seat until SC2 is released, supposedly SC2's first part will be released end of the month, but we'll see.
anyways, 5670 would be a good start, basic card, but If it were me I'd think about maybe a 5750 at least.
other things not listed, will you be using your old Windows, or using a new version?
also what about Hard drives?i7 940//Corsair H60//EVGA X58 SLI LE//6GB Corsair Vengeance 1600MHz//2x EVGA GTX 560 Ti FPB SLI//NZXT Hale82 850W//CM 690 II Advanced//Win7 64//WD 74GB V-raptor, 750GB Black, 1.5TB Green

What case are you planning on using?
You may want to make sure it has adequate cooling and space
