    hey, i was wondering how do you actually overlcok ram ?

    You do it by raising the FSB on your CPU at a 1:1 ratio with the RAM.

    Ram generally doesn't die due to overclocking unless you raise the voltage. Generally speaking if you clock it too high you system will just be unstable. Random reboots, random shut down of programs, stuff like that. As far as voltage goes, that largly depends on the type of ram you've got. Value ram generally does not take kindly to overvolting.

    the highest I had my old Kingston pc3200 valueram was 2.75v to run 2.5-3-3-7 from 3-3-3-8

    @ 2.8 I could surprisingly do 2-3-3-7 but 2.8 was risking it on valueram.

    With my 2x 512 Gold VX pc4000, I currently run 2-2-2-5, 225mhz @ 3.0v even though i've gone higher with the volts, 3.3v to be exact, but i don't have the proper cooling on them to run it like that

    That depends on the RAM itself, it's really hard to destroy your RAM by burning it out, but the CPU is the most vulnerable and then the mobo. Again, it depends on the RAM specs, especially the RAM chips.
