How long to run and what test is the best to tell if its stable?

Are you testing a stock system or an overclock?

The Small FFT Torture test creates the most heat in the CPU, so it is good for testing the CPU, a CPU overclock and the CPU cooling. If Small FFT crashes and the CPU temp is not too high, then the CPU probably needs more voltage.

The Blend Torture Test stresses the RAM and Northbridge, it's good for an overall system stress test. A crashing Blend test tells you there is a problem with RAM timings/subtimings, RAM voltage or Chipset voltage.

I've tested overclocked systems for up to 24 hour to verify stability before starting to run folding@home, but 30 min to an hour is usually fine for most applications.
