your temps are backwards system is more than likely 27c and cpu 41 both are farely good. You'll need to post all your system specs for oc'ing help such as ram and anything else component wise ect.
As overclocking is not an exact science you'll be best to start off slow and guess and check it. Up the FSB a little at a time and see where you can get it. good luck and remember just because someone with the same cpu mobo and what not get a great oc doesn't mean you'll get the same.
one thing to note if you just read through some of the threads on oc'ing you'll see what steps most people take when overclocking. On another personal thing I don't see your need for oc'ing the 2800 other than bragging rights. That sucker is plenty fast as is right out of the box
