Would it work having a 60gb ssd and 2 western digital 640s all in raid 0 ?? |

it could probably work, I wouldn't recommend it, you probably couldn't use more then 60GB of those 640GB discs.
best is to use the SSD as windows/programs partition and the 640Gb's in raid 0 for speed, those should perform very well.
My WD Caviar Black 640GB discs run raid 0 and in HDTune benchmark, they peak out at 220MB/s, close to very fast SSD drives

and what do you need to do to use RAID and also what do i need to do to keep it running i know you cant just set it up and leave it be |

At this point I wouldn't go for a raid setup if you're looking to use a SSD. The Corsair P128 and X128 kick the crap out of my raptor's running raid 0. Here is a review for you.

also keep in mind SATA 3 drives should be coming out soon too, with double SATA II's speeds/data rates.
several sites are already selling SATA 3 cables, and have yet to see any drives sold anywhere, but on that note I looked them up and one of the drive companies, I think Seagate was to release a SATA 3 drive, at least had a prototype or something to run earlier this year for reviews and show, etc.
but agree with the others, use the SSD for Windows and some programs and run the rotational drives in RAID 0 for fast access... or even RAID 1 for redundancy of data.
if you ran the 60GB SSD with the 640's as Ultima said, you'd only have 60GB of the 640GB capacity to run in RAID 0, meaning you'd have to partition the remaining space to be used by itself, or RAID those 2 partitions together for a 2nd RAID 0 array... but that would cause some issues I would imagine, running 2 RAID 0 arrays on 2 hard drives, via 2 partitions.

Not only that but what would be the point of having the SSD, the other drives would slow it down in raid0.

I wont be buying the ssd anymore, But 2 640gb wd black in raid 0 what do i need to use raid and how do i maintain it? |

For Raid 0, most motherboards will support this. You don't really need to, but you "could" get a cheap raid card like a Perc 5/i (best if not using an intel chipset) or Adaptec 3805. No real need for a dedicated card since you are not doing parity calculations. Stick to the onboard RAID 0. |

Except back up of course, and any single drive needs that. 
Edit;
I may have defraged it, but again any single drive would need that.
