How can I make old computer to record of security camera?

Image quality from a webcam will be junky but you'll be able to see a room ok, and see if someone is coming/going, probably tell who it is, but details will be blurry.

Most software only records when it detects motion and as such, you could get weeks worth of recordings on a small 80GB or so HD. And most software loops, starts overwriting old data automatically.

You will encounter issues trying to install 250gb or 500gb drives in an old pc.

It can be done but will require software or an add-on controller card.

Possibly need to modify your Windows also if you have Win98, ME or 2k.

A web cam will not see 300ft. It will be lucky to see clearly 30ft.
You will need a pretty good CCTV camera. If you want 300ft clearly you want one with about a 200mm lens. Expensive for a good one.
You want to consider options like black and white for good night time/low light resolution.
A motion sensor will probably work to a max. of 30 ft. Consider an infrared beam. Big bucks.
I would just stick the camera up 24/7 and look for the damage then review the footage at high speed and look for anomolies.
